Instant Pot Chicken and Sausage Jambalaya

Ingredients

  • 1 tbsp. olive oil
  • 1 lb Andouille sausage
  • 1 lb chicken
  • 1 1/2 c rice
  • 2 c chicken stock
  • 1 1/2 c onion
  • 1 c tomatoes
  • 1 c celery
  • 1 c poblano peppers (or bell pepper)
  • 1/2 c green onion
  • 1 tbsp. Worcestershire
  • 1 tbsp. garlic
  • 1 tbsp. Tony’s original seasoning

Instructions

  1. Turn your instant pot on to the sauté setting and add your olive oil.
  2. Once warm, add your sausage and sauté until brown (approx. 5 minutes).
  3. Add the remainder of your ingredients and stir.
  4. Once combined, set your instant pot to manual on high for 5 minutes and secure the lid.
  5. Once done, fluff with your wooden spoon and serve.
