Ingredients
- 1 12- to 15-pound Turkey
- Butter
- Herbs
- Kosher Salt
- 1 bunch thyme
- 1 bunch sage
- 1 red onion, sliced
- 1 apple, sliced
Instructions
- To prepare turkey, two days before you are going to roast bird rub the inside and out with kosher salt and refrigerate for 24 hours, covered, breast side down and then rotate to breast side up for the last 24 hours.
- Let turkey temper covered on the counter for 3 1/2 hours. Place herbs, apples, and onion in the cavity, then insert temperature probe in the thickest part of thigh and roast on convection 375⁰ for 2 to 2.5 hours until thermometer reads 165⁰ internal temperature. Let rest on counter, covered, for 20 minutes before carving.
