Oven-Fried Parmesan Potato Chips

  • 3 medium to large baking potatoes
  • 4 tbsp. olive oil (divided)
  • 3 -4 pinches sea salt
  • 2 tbsp. Parmesan cheese, finely grated


  1. Preheat the oven to 350 degrees F.
  2. Wash the potatoes and use a mandolin slicer on the thinnest setting to slice the potatoes.
  3. Brush two tablespoons of olive oil on two sheet pans until fully coated. Place the pan in the oven and heat for 10 minutes.
  4. While the pan is heating in the oven, place the potato slices into a large mixing bowl, and toss with remaining olive oil and salt.
  5. Carefully line the potato slices on the hot baking sheet. Place the pan into the hot oven and bake for 10 minutes. Rotate the pan, flip the chips with a pair of tongs and bake for another 8 minutes.
  6. Remove the pan from the oven and transfer the chips to a plate lined with paper towels to absorb any grease.
  7. Sprinkle with grated Parmesan and allow them to cool. The potato chips will also crisp up slightly as they cool.
  8. Chips can be served warm or at room temperature. Serve with a beer, or alongside a sandwich or burger, or whatever you fancy!
