Ingredients
- 3 medium to large baking potatoes
- 4 tbsp. olive oil (divided)
- 3 -4 pinches sea salt
- 2 tbsp. Parmesan cheese, finely grated
Instructions
- Preheat the oven to 350 degrees F.
- Wash the potatoes and use a mandolin slicer on the thinnest setting to slice the potatoes.
- Brush two tablespoons of olive oil on two sheet pans until fully coated. Place the pan in the oven and heat for 10 minutes.
- While the pan is heating in the oven, place the potato slices into a large mixing bowl, and toss with remaining olive oil and salt.
- Carefully line the potato slices on the hot baking sheet. Place the pan into the hot oven and bake for 10 minutes. Rotate the pan, flip the chips with a pair of tongs and bake for another 8 minutes.
- Remove the pan from the oven and transfer the chips to a plate lined with paper towels to absorb any grease.
- Sprinkle with grated Parmesan and allow them to cool. The potato chips will also crisp up slightly as they cool.
- Chips can be served warm or at room temperature. Serve with a beer, or alongside a sandwich or burger, or whatever you fancy!
