A perfect toast to serve with a salad, spaghetti, lasagna, or it makes a great appetizer.. This is an easy recipe to increase if needed, depending on the size of your party.

Ingredients
- 4 thick slices sourdough bread, each sliced into fourths
- 1 (14-ounce) can artichoke hearts, (8.5-ounces drained) roughly chopped
- 1 clove garlic, finely minced
- 2 oz Parmesan cheese, grated (about 3/4 cup)
- 1 oz Gruyère cheese, coarsely grated (about 1/2 cup)
- 2 tbsp. sour cream
- 1 tsp. finely grated lemon zest
- Kosher salt, to taste
- freshly ground pepper, to taste
- 2 tbsp. panko
- 1/4 c flat-leaf parsley, chopped
Instructions
- In a medium bowl, combine artichokes, garlic, Parmesan, Gruyère, sour cream, lemon zest, and 1/4 teaspoon each salt and pepper.
- Spoon on the toast slices and sprinkle with panko.
- Bake until golden brown and cheese is melted, 8 to 10 minutes. Sprinkle with chopped parsley, if desired.
- The cheesy artichoke toasts are delicious served on the side with spaghetti and meatballs.
- Heat broiler. Broil bread slices until crisp, 1 to 2 minutes per side. Transfer to a baking sheet and reduce oven temperature to 425°F.
