Tomato Confit

  • 1 qt Roma or Juliet Tomatoes
  • 2 c olive oil
  • 1 bunch fresh Basil, or Rosemary or Thyme
  • 5 cloves garlic
  • 1 strip lemon zest
  • 1 tbsp. chili flake
  • salt, to taste


  1. Dehydrate tomatoes at 170° until they have lost half of their moisture.
  2. Combine all ingredients and add salt to taste. Simmer on low for an hour.
  3. Let cool on counter and store in refrigerator.
