Ingredients
Green Beans
- 1/2 tbsp. toasted sesame oil
- 2 cloves garlic, thinly sliced
- 1 lb green beans, rinsed and ends trimmed
Sauce
- 1 tbsp. reduced sodium soy sauce or coconut aminos
- 1/2 tbsp. toasted sesame oil
- 2 tbsp. creamy peanut butter
- 1 tsp. freshly grated ginger
- 1 tsp. rice wine vinegar
- 1/4 tsp. red pepper flakes, optional
- 1/4 c water
- salt, to taste
Garnish
- green onion
- sesame seeds
- 1 tablespoon roasted peanuts

Green Beans
Sauce
- Place a large skillet over medium heat. Add sesame oil and garlic and sauté for 30 seconds or until garlic is fragrant.
- Immediately add green beans, stirring frequently until beans are slightly golden brown, about 5-8 minutes.
- While the beans are cooking, make the sauce.
- In a small saucepan over medium-low heat, add all of the sauce ingredients and whisk to combine.
- Once the green beans are cooked and slightly golden and al dente, reduce heat to low and pour sauce over the beans.
- Stir to coat the beans, then cover and simmer for a few minutes to allow the beans to continue cooking.
- Taste and add more salt, if necessary.
- Garnish with sliced green onion, sesame seeds and roasted peanuts.
