Reinvented Peach Cobbler

Ingredients

For the cobbler filling

  • 6 peaches, sliced
  • 1/3 c brown sugar
  • 2 tbsp. cornstarch
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg

For the crumble

  • 1/3 c rye flour
  • 2/3 c all-purpose flour
  • 2 tbsp. granulated sugar
  • 3/4 tbsp. kosher salt
  • 1/4 tsp. nutmeg
  • 4 tbsp. unsalted butter, in 1/4 inch dice
  • 1/2 c whipping cream

Instructions

  1. Preheat oven to 400°.
  2. In a medium bowl, toss together peaches, brown sugar, cornstarch, cinnamon, and nutmeg. Pour into a buttered 9 x 9 baking dish.
  3. In another bowl, whisk together the flours, sugar, salt, and nutmeg. Toss in the butter and rub each cube between your fingers to flatten.
  4. Add cream and stir to loosely combine. Press cobbler crumble together and spread over the top of peaches.
  5. Bake for 35 minutes or until golden brown and juices are bubbling.
  6. Serve warm with vanilla ice cream.
