Ingredients
- 1/2 -3/4 cup semi-sweet chocolate chips
Dry:
- 2 c almonds (You can also use 1 cup almonds, 1 cup walnuts)
- ½ cup flax meal
- ½ cup shredded coconut (unsweetened)
- ½ teaspoon salt
Wet:
- ½ cup coconut oil
- ½ cup almond butter
- 9 - 10 large Medjool dates (pitted)
- 1 tsp. vanilla
- 1 tsp. almond extract
- 1 tbsp. honey
Instructions
- Place nuts, flax meal, shredded coconut and salt in food processor. Pulse until it becomes “gravel.”
- In a small saucepan, melt the coconut oil on low heat. Add the dates, almond butter, vanilla, almond extract & honey. Stirring occasionally, keep on heat until all ingredients are combined and warm.
- Add coconut oil mixture to the food processor and pulse until it all comes together to form a solid “gravel-filled dough.”
- Press the mixture into an 8 x 8 or a 9x15 glass dish. (I use the bottom of a drinking glass to press the mixture down. You want to press it down tight so the bars will be solid)
- Melt chocolate chips on very low heat. Pour and spread over the bars to make a thin layer of chocolate. (it is okay not to use the all the chocolate. You want the bars to have a thin layer of chocolate).
- Refrigerate for at least 1 hour until the bars cool and the chocolate sets.
- Remove from refrigerator and cut into small squares.
