2calmonds (You can also use 1 cup almonds, 1 cup walnuts)
½ cup flax meal
½ cup shredded coconut (unsweetened)
½ teaspoon salt
½ cup coconut oil
½ cup almond butter
9- 10 large Medjool dates (pitted)
Place nuts, flax meal, shredded coconut and salt in food processor. Pulse until it becomes “gravel.”
In a small saucepan, melt the coconut oil on low heat. Add the dates, almond butter, vanilla, almond extract & honey. Stirring occasionally, keep on heat until all ingredients are combined and warm.
Add coconut oil mixture to the food processor and pulse until it all comes together to form a solid “gravel-filled dough.”
Press the mixture into an 8 x 8 or a 9x15 glass dish. (I use the bottom of a drinking glass to press the mixture down. You want to press it down tight so the bars will be solid)
Melt chocolate chips on very low heat. Pour and spread over the bars to make a thin layer of chocolate. (it is okay not to use the all the chocolate. You want the bars to have a thin layer of chocolate).
Refrigerate for at least 1 hour until the bars cool and the chocolate sets.
Remove from refrigerator and cut into small squares.
