Ingredients
- 2 c grated Parmesan cheese
- Cooking spray
- 1 (16-ounce) container mixed greens
- Vera’s Tomato Vinaigrette
- 24 grilled peach slices (about 4 whole peaches)
- 16 avocado slices (about 2 large avocados)
- 16 grapefruit sections (about 1 to 2 large grapefruit)
- Crumbled feta cheese, to taste
Instructions
- Preheat the oven to 375°F and line a sheet pan with parchment paper.
- Take ¼ cup of grated Parmesan and place on the prepared sheet pan. Slightly spread the Parmesan out to create a circle. Continue with remaining grated Parmesan, making 8 total.
- Spray each Parmesan round lightly with cooking spray.
- Place in the oven and bake for 8 to 10 minutes, or until the Parmesan is crispy. Remove and set aside until ready to serve.
- Toss the mixed greens with a small amount of the dressing; add more to taste.
- When ready to plate, place a bed of mixed greens on each plate and top with 3 slices of grilled peaches, 2 slices avocado, 2 grapefruit sections, and top with feta cheese crumbles. Place the Parmesan crisp on top and enjoy!
