German Beer Cheese Sauce


  • 1/4 c unsalted butter
  • 1/2 c all-purpose flour
  • 1 c whole milk
  • 1-2 cups dark German beer
  • 1 c shredded sharp white cheddar
  • 1 c shredded mild cheddar
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste


  1. In a medium sauce pot on medium heat, melt together the butter and flour to make a roux.
  2. Add in the milk and beer and whisk until it becomes very thick.
  3. Whisk in the cheeses until it is smooth and season with salt and pepper.
  4. Serve warm.
