Blueberry Muffins

Ingredients

  • 1/2 c butter, at room temperature
  • 1 c granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 c AP flour
  • 1/2 c milk
  • 2 c fresh blueberries or frozen blueberries

For the Topping

  • 1 tbsp. granulated sugar
  • 1/4 tsp. ground nutmeg

Instructions

  1. Heat oven to 375 degrees F.
  2. Grease 18 regular-size muffin cups.
  3. In a bowl, mix butter until creamy.
  4. Add sugar and beat until light and fluffy.
  5. Add eggs one at a time, beating after each.
  6. Beat in vanilla, baking powder, and salt.
  7. With a spoon, fold in half of flour then half of the milk into batter; repeat.
  8. Fold in blueberries.
  9. For the topping: Mix together the granulated sugar and ground nutmeg.
  10. Spoon into muffin cups about 2/3 full and sprinkle topping onto each muffin.
  11. Bake 15 to 20 minutes, until golden brown and springy to touch.
