Ingredients
- green cabbage, 3 cups thinly sliced
- 1 1/2 c shredded carrots
- 2 red onions, thinly sliced
- 1 c sesame sticks
- 1 c Cosmic apples
- 1 c peanuts, coarsely chopped, divided
- 1/2 c peanut butter
- 2 tsp. Worcestershire sauce
- 1 c apple cider vinegar
- 1 c brown sugar
- 1/4 tsp. cayenne pepper
- 1/2 tsp. celery seeds
- 2 garlic cloves, minced
- 1/2 c peanut oil
- 1 tbsp. salt
- 1 tbsp. of black pepper
- 1/4 c parsley, coarsely chopped
Instructions
- Combine green cabbage and cabbage and add onions.
- Toss in sesame sticks, apples and ½ cup peanuts.
- Prepare dressing in a food processor by combining peanut butter, Worcestershire sauce, vinegar, sugar, cayenne, celery seed and garlic. Pulse to combine.
- With the food processor running, pour in the oil in a thin stream to form a thick creamy dressing.
- Season with salt and pepper, pulsing the mixture to combine.
- Toss coleslaw mix with the dressing, top with remaining peanuts and parsley.
- Serve cold.
