Ingredients
- 1 1/2 lb baking potatoes (about 2 baking potatoes)
- 1/2 c grated Swiss cheese
- 1/2 c grated Gruyere cheese
- 1/2 c grated Parmesan cheese
- 1 c heavy cream
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 2 tbsp. unsalted butter, melted
Instructions
- Wash and slice the potatoes about ⅛-inch thick using a mandoline. Place the potato slices in a bowl of water.
- Preheat the oven to 350°F and prepare the 9x9-inch casserole dish with cooking spray.
- Arrange a layer of potatoes in the bottom of the casserole dish and sprinkle with the three cheeses. Continue layering potatoes and cheeses until you’ve used them all, ending with a layer of cheese.
- In a separate bowl, whisk the heavy cream with the salt and pepper. Pour the cream and the melted butter over the potatoes.
- Place in the oven and bake for 1 hour or until golden brown on top. Serve hot.
