- 1 1/2 c fresh peaches, diced (4-6 peaches, depending on size)
- 1 tomato (large), diced
- 1/4 c sweet onion, diced
- 1/2 jalapeno, seeds removed and diced
- 1 tbsp. cilantro, chopped
- Juice of one lime
- In a small bowl, add peaches, tomato, onion, jalapeno, cilantro and the lime juice. Toss to combine.
- Serve on tacos, chips or your favorite protein.
