Tea Time Lasagne

Ingredients

For the Meat Sauce

  • 1 lb Sweet or hot Italian sausage, skinned and chopped
  • 3/4 lb Ground Beef
  • 1/2 c Onion, minced
  • 2 Garlic cloves, crushed
  • 1 tbsp. Sugar
  • 1 1/2 tbsp. Basil
  • 1/2 tsp. Fennel Seed
  • 1 tsp. Italian Seasoning
  • 1 tbsp. Salt
  • 1/4 tsp. Pepper
  • 34 oz Can of Italian-style plum tomatoes, mashed
  • 2 tbsp. Parsley Chopped

For the Lasagne

  • 12 oz Tomato Paste (2x6 oz cans)
  • 16 oz Seasoned Tomato Sauce
  • 1/2 c Water
  • 12 Lasagne Noodles
  • 16 oz Ricotta or Cottage Cheese
  • 1/2 Egg
  • 2 tbsp. Parsley, chopped
  • 1/2 tsp. Salt
  • 3/4 lb Mozzarella Cheese, sliced
  • 3/4 c Grated Parmesan

Instructions

  1. Sauté sausage, beef, onion, and garlic until well browned. Add next 11 ingredients and simmer covered for 1 1/2 hours, stirring occasionally. Cook noodles according to directions. Drain and rinse with cold water. Combine ricotta cheese (or cottage cheese) with egg, parsley, and half teaspoon salt. To assemble, spoon 1 1/2 cups of meat sauce onto the bottom of a 13x9x2inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with half the ricotta cheese mixture. Top with a third of the mozzarella cheese slices. Spoon 1 1/2 cups of meat sauce over mozzarella and sprinkle with 1/4 cup of parmesan cheese. Add in layers the remaining noodles, ricotta cheese mixture, and half the remaining mozzarella and all meat sauce. Top with mozzarella and sprinkle with parmesan cheese. Cover with foil and bake for 25 minutes at 375 degrees. Remove foil and bake 25 more minutes. Remove from oven. Cool 15 minutes before serving.
