Company Meat Loaf

Ingredients

Meat Loaf

  • 2 eggs, beaten
  • 1 (8-ounce) can tomato sauce
  • ½ teaspoon dried thyme
  • ½ teaspoon dried marjoram
  • 1 tsp. salt
  • Pepper to taste
  • ¼ to ½ cup chopped mild onion (Vidalia)
  • 1 ½ pounds ground chuck
  • ½ cup medium saltine cracker crumbs
  • ½ cup chopped green bell pepper

Sauce:

  • 1 (8-ounce) can tomato sauce
  • 2 tbsp. light brown sugar
  • ½ teaspoon Lawry’s Seasoned Salt
  • 1 tbsp. red wine vinegar
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried marjoram
  • Dash pepper

Instructions

  1. For the meatloaf, preheat the oven to 350 degrees.
  2. In a medium bowl, combine the eggs, tomato sauce, thyme, marjoram, salt, and pepper.
  3. Add the onion, ground chuck, cracker crumbs, and bell pepper and mix well.
  4. Shape the mixture into a loaf and place on a rimmed baking pan.
  5. For the sauce, combine the tomato sauce, brown sugar, seasoned salt, vinegar, thyme, marjoram, and pepper.
  6. Pour the sauce over the meat loaf.
  7. Bake for about 1 ¼ hours.
  8. Pour off the excess juice.
