Ingredients
- 4 large eggs, room temperature
- 2 c granulated sugar
- 1 c vegetable oil
- 3 c all-purpose flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1 1/2 tsp. salt
- 2 c shredded zucchini, do not peel the zucchini and use the large side of a box grater
- 1 tbsp. pure vanilla extract
- 1 c chopped walnuts
- 1/2 tsp. dried lavender buds
Instructions
- Preheat the oven to 350°F and prepare two 8x4-inch loaf pans with baking spray.
- Blend the first three ingredients thoroughly in a large mixing bowl.
- In a separate mixing bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and mix.
- Add in the zucchini, vanilla extract, walnuts, and lavender buds and mix until just combined.
- Pour the batter into the two greased loaf pans.
- Place in the oven and bake for 45 to 55 minutes, or until a wooden skewer inserted in the middle comes out clean.
- Remove the loaf pans from the oven and cool on wire racks.
