Spinach Ricotta Brunch Bake

Ingredients

  • 1 sheet puff pastry, thawed
  • 5 eggs, beaten
  • 1 c ricotta cheese
  • 2 dashes hot sauce, optional
  • ½ teaspoon each salt and cracked black pepper, plus
  • 1 c spinach, chopped*
  • 6 slices bacon cooked, chopped
  • 1 c cheddar cheese, shredded, plus ½ cup for the top
  • ½ cup feta cheese
  • 1 medium red bell pepper, chopped
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F. Spray a 9-inch springform pan with cooking spray.
  2. Unfold pastry sheet and roll out to 12-inch square; use to line the bottom and side of the prepared springform pan.
  3. Mix eggs with ricotta, hot sauce, salt, pepper and spinach. Layer half each of the bacon, cheddar, feta, ricotta mixture and peppers in crust. Repeat layers. Sprinkle the ½ cup cheddar cheese on top and fold over the sides of the puff pastry. Sprinkle kosher salt and freshly cracked black pepper on top.
  4. Bake 1 hour to 1 hour and 20 minutes or until golden brown. Cool 10 min. Run small knife around edge of pan to loosen crust before removing rim.
  5. *If using frozen spinach, thaw it out first and drain it well before using.
