Ingredients
- 1 sheet puff pastry, thawed
- 5 eggs, beaten
- 1 c ricotta cheese
- 2 dashes hot sauce, optional
- ½ teaspoon each salt and cracked black pepper, plus
- 1 c spinach, chopped*
- 6 slices bacon cooked, chopped
- 1 c cheddar cheese, shredded, plus ½ cup for the top
- ½ cup feta cheese
- 1 medium red bell pepper, chopped
- Kosher salt
- Freshly cracked black pepper
Instructions
- Preheat oven to 400°F. Spray a 9-inch springform pan with cooking spray.
- Unfold pastry sheet and roll out to 12-inch square; use to line the bottom and side of the prepared springform pan.
- Mix eggs with ricotta, hot sauce, salt, pepper and spinach. Layer half each of the bacon, cheddar, feta, ricotta mixture and peppers in crust. Repeat layers. Sprinkle the ½ cup cheddar cheese on top and fold over the sides of the puff pastry. Sprinkle kosher salt and freshly cracked black pepper on top.
- Bake 1 hour to 1 hour and 20 minutes or until golden brown. Cool 10 min. Run small knife around edge of pan to loosen crust before removing rim.
- *If using frozen spinach, thaw it out first and drain it well before using.
