Raspberry and Mint Ice Cubes

Ingredients

  • 1/2 pt fresh raspberries
  • 1 pkg of fresh mint
  • Water

Instructions

  1. In a food processor, puree the raspberries with a little bit of water until smooth.
  2. Using a fine-mesh sieve, pour the mixture into a 2-cup pyrex dish. You should have about 1 cup of the pureed raspberries.
  3. Add 1 cup of water to the pureed raspberries.
  4. Fill 2 ice cube trays with the liquid.
  5. Top each ice cube with a mint leaf.
  6. Place in freezer until solid.
