Pineapple Casserole

Ingredients

  • 1 (20 ounce) can pineapple chunks
  • 6 tbsp. all-purpose flour
  • 1 c white sugar
  • 2 c shredded Swiss cheese
  • 1 (20 ounce) can crushed pineapple, drained
  • 40 buttery round crackers (Ritz), crushed
  • 1 c butter, melted
  • 1 c diced ham
  • 1 small Vidalia onion, thinly sliced
  • ½ tbsp dried rosemary

Instructions

  1. Preheat the oven to 350 degrees. Drain the pineapple chunks, reserving ¼ cup of the juice.
  2. Combine the flour, sugar, swiss cheese, reserved pineapple juice, pineapple chunks, and crushed pineapple in a large bowl. Pour the mixture into a 1 ½ quart casserole dish. Mix the cracker crumbs and butter in a small bowl, then sprinkle over the pineapple mixture.
  3. Bake in the preheated oven until golden brown, about 30 minutes.
