Ingredients
- 3 c self-rising flour
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 3 c sugar
- 1 c vegetable oil
- 2/3 c water
- 1 c canned pumpkin
- 1 tsp. vanilla extract
- 1 c chopped pecans
- 4 eggs
- 2 tbsp. butter, optional
- Spice and Tea Exchange salted caramel sugar, optional
Instructions
- Preheat oven to 350 degrees.
- In a large bowl or stand mixer add the flour, spices and sugar. Using the paddle attachment, mix to combine. In a medium bowl blend the oil, water and pumpkin.
- Add the wet mixture to the flour mixture and blend on low-medium speed. Add the eggs one at a time and mix to combine.
- Pour the batter into two greased 9x5x3 inch loaf pans that have been greased and lightly floured. Bake at 350 for 45-50 minutes. Bread is done when a toothpick inserted comes out clean and loaves are golden brown on top.
- If desired, brush melted butter on loaves and sprinkle salted caramel sugar on top while still warm.
