Pecan Crusted Salmon

Ingredients

  • 1 tbsp. butter
  • 1/4 c Pearson Farm pecans, chopped
  • 4 salmon filets, skin removed
  • 1/4 c fresh parsley, chopped
  • 2 tbsp. olive oil
  • 1/2 tsp. coarse salt
  • 1/4 tsp. black pepper

Instructions

  1. Preheat the oven to 375 F and line a baking sheet with parchment paper.
  2. Melt the butter in a sauté pan and add the chopped pecans and toast for 5-7 minutes.
  3. In a small bowl, combine toasted pecans, parsley, olive oil, salt and pepper.
  4. Spread the topping evenly over the salmon filets, coating all sides.
  5. Place the salmon filets on a baking sheet.
  6. Bake for 18 minutes, or until the fish is fully cooked.
  7. Serve with asparagus or your favorite rice!
