Ingredients
- 1 tbsp. butter
- 1/4 c Pearson Farm pecans, chopped
- 4 salmon filets, skin removed
- 1/4 c fresh parsley, chopped
- 2 tbsp. olive oil
- 1/2 tsp. coarse salt
- 1/4 tsp. black pepper
Instructions
- Preheat the oven to 375 F and line a baking sheet with parchment paper.
- Melt the butter in a sauté pan and add the chopped pecans and toast for 5-7 minutes.
- In a small bowl, combine toasted pecans, parsley, olive oil, salt and pepper.
- Spread the topping evenly over the salmon filets, coating all sides.
- Place the salmon filets on a baking sheet.
- Bake for 18 minutes, or until the fish is fully cooked.
- Serve with asparagus or your favorite rice!
