Mrs. Dull’s Simple Apple Cake

Ingredients

  • 1/2 c all-purpose or cake flour, divided
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs
  • 1 c packed light or dark brown sugar
  • 2 tsp. vanilla extract
  • 1 c chopped pecans, plus more for garnish if desired
  • 1 c chopped peeled apples

Instructions

  1. Position rack in the center of the oven and preheat to 350 degrees. Butter a 9-inch pie plate.
  2. Sift 1/4 cup of the flour, baking powder, and salt together onto a piece of waxed paper and set aside.
  3. Beat the eggs and sugar with an electric mixer until light. Stir in flour mixture and vanilla, and blend quickly but well with the mixer. Toss the nuts and apples in the remaining flour and stir into the batter.
  4. Spoon batter into the pie plate and bake for 35 minutes. Sprinkle more nuts over the top, if desired, and serve warm or cold with ice cream or whipped cream.
