KitKat Blondie

This blondie is fudgy and loaded with Vera’s favorite candy, KitKats!

Ingredients

  • 3/4 c unsalted butter, melted
  • 1 1/2 c light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp. vanilla extract
  • 1 1/2 c plain/all-purpose flour
  • 1/4 tsp. salt
  • 16 2 finger KitKat bars (or 8 4-finger bars), 4 bars crushed, 12 left whole

Instructions

  1. Preheat the oven to 180C/350F/Gas 4
  2. Line an 8x8-inch square baking pan with foil or parchment paper
  3. Set aside
  4. In a large bowl, whisk together the butter and sugar until combined Add the egg, egg yolk, and vanilla, and whisk until smooth and combined
  5. Add the flour and salt, and whisk until completely combined.
  6. Spoon half of the batter into the prepared pan
  7. Place the whole KitKat bars on top, then spoon the remaining batter over the KitKats, spreading out evenly
  8. Sprinkle with the crushed KitKat bars
  9. Bake for 35 - 40 minutes, or until the edges are browned and the centre is no longer jiggly - just set
  10. Allow to cool completely in the pan on a wire rack before cutting into squares
