German Apple Cake

This cake is so moist and delicious. It uses a heaping helping of apples which really helps to add the moisture and flavor! The cream cheese icing just makes it melt in your mouth.

Ingredients

Cake

  • 3 large eggs
  • 2 c sugar
  • 1 c Pecan oil
  • 1 tsp. vanilla extract
  • 2 c all-purpose flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 4 c peeled and finely chopped tart apples, I use Granny Smith
  • 1 c chopped pecans

Frosting

  • 1 (8-ounce) package cream cheese, softened
  • 2 tbsp. butter, softened
  • 1 tsp. vanilla extract
  • 1 tbsp. half-and-half or milk
  • 2 c confectioners' sugar

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13-inch pan with cooking spray.
  2. In a large bowl, whisk together sugar, eggs, oil, and vanilla extract until completely combined.
  3. Toast spices in a pan on a cooktop
  4. In a separate bowl, whisk together flour, toasted spices, baking soda, and salt.
  5. Add dry ingredients to wet and stir to combine.
  6. Fold in apples and pecans. Pour batter into prepared pan.
  7. Bake 50 to 55 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool.
  9. Make frosting. Place cream cheese and butter in a large bowl. Beat with electric mixer until smooth.
  10. Add vanilla extract, half-and-half, and confectioners' sugar and beat until smooth.
  11. Spread on top of cake. Store leftovers in refrigerator.
