- 1 cucumber, peeled and deseeded
- 1 pkg of fresh thyme
- Peel and deseed the cucumber.
- In a food processor, puree the cucumber with a little bit of water until smooth.
- Using a fine-mesh sieve, pour the mixture into a 2-cup pyrex dish. You should have about 1 cup of the pureed cucumber.
- Add 1 cup of water to the pureed cucumber.
- Fill 2 ice cube trays with the liquid.
- Top each ice cube with a small sprig of thyme.
- Place in freezer until solid.
