Cucumber and Thyme Ice Cubes

Ingredients

  • 1 cucumber, peeled and deseeded
  • 1 pkg of fresh thyme
  • Water

Instructions

  1. Peel and deseed the cucumber.
  2. In a food processor, puree the cucumber with a little bit of water until smooth.
  3. Using a fine-mesh sieve, pour the mixture into a 2-cup pyrex dish. You should have about 1 cup of the pureed cucumber.
  4. Add 1 cup of water to the pureed cucumber.
  5. Fill 2 ice cube trays with the liquid.
  6. Top each ice cube with a small sprig of thyme.
  7. Place in freezer until solid.
