Ingredients
- 4 Catfish Filets
- 2 c AP Flour
- 1 c Cornmeal (fine grind)
- 2 tbsp. Fat Man's BBQ Rub
- 2 whole eggs
- 1/2 c whole milk
- Salt and pepper to taste
Honey Cat Sauce
- 1/2 c local organic honey
- 1/2 c Texas Pete hot sauce
- 1 tbsp. of fresh squeezed lemon juice
Instructions
- Pat the fish dry with paper towels. Sprinkle the fish with salt and pepper.
- Dip the fish in flour (1 cup - seasoned with salt & pepper) and tap off the excess flour. Then dip the fish into the egg wash (eggs/milk mixed well) and then the cornmeal/flour mix (1 cup cornmeal, 1 cup flour, 2 tablespoons BBQ rub), ensuring to coat evenly. Repeat the process with each fillet, then carefully drop the coated fish in the fryer (Fry Daddy Home Fryer).
- Cook the fish in batches until golden brown on both sides, 4 to 5 minutes. Remove from the fryer and place on paper towels to drain excess oil.

- Whisk all ingredients together in small mixing bowl.
