Cornmeal-Dusted Catfish with Honey Cat Sauce

Ingredients

  • 4 Catfish Filets
  • 2 c AP Flour
  • 1 c Cornmeal (fine grind)
  • 2 tbsp. Fat Man's BBQ Rub
  • 2 whole eggs
  • 1/2 c whole milk
  • Salt and pepper to taste

Honey Cat Sauce

  • 1/2 c local organic honey
  • 1/2 c Texas Pete hot sauce
  • 1 tbsp. of fresh squeezed lemon juice

Instructions

  1. Pat the fish dry with paper towels. Sprinkle the fish with salt and pepper.
  2. Dip the fish in flour (1 cup - seasoned with salt & pepper) and tap off the excess flour. Then dip the fish into the egg wash (eggs/milk mixed well) and then the cornmeal/flour mix (1 cup cornmeal, 1 cup flour, 2 tablespoons BBQ rub), ensuring to coat evenly. Repeat the process with each fillet, then carefully drop the coated fish in the fryer (Fry Daddy Home Fryer).
  3. Cook the fish in batches until golden brown on both sides, 4 to 5 minutes. Remove from the fryer and place on paper towels to drain excess oil.

  1. Whisk all ingredients together in small mixing bowl.
