For my recipe’s this month, I’ve allowed my 3 VeryVera graduates to submit one of their Mom’s favorites. Hope you enjoy!


Moroccan Chicken - Paul Van Peursem's favorite recipe from his Mom, Sally
Spice Mixture:
1 1/2 T. Sweet paprika
1 1/2 T. Cumin
1 tsp. Tumeric
1 tsp. grilling seasoning
1 tsp. coriander
2 pinches or more of cinnamon

4 to 6 chicken breast halves (chicken meat cut in bite-size chunks)
Onions, garlic cloves, chopped prunes, raisins
Chicken

Instructions:
Brown chicken in olive oil. Add sliced onions and stir and cook for a couple of minutes. Add chopped garlic; add chopped prunes; add spice mixture. Scatter in the raisins. Let cook for a few minutes to cook teh spices. Add the chicken stock, cover and cook on low 5 to 10 minutes. Remove lid; continue to cook on low about 5 minutes.

Serve over rice.


Kentucky Hot Brown - Ben Nye's favorite recipe from his Mom, Debbie

2 T. butter
1/4 c. flour
2 c. milk
1/4 tsp. salt
1 tsp. Worchestershire
3/4 c. shredded mozzarella
3/4 c. Parmesan cheese
Sliced Turkey (left over)
French Bread (left over)
Sliced Tomatoes*
8 slices bacon

Melt butter in sauce pan, add flour, stir well. Add milk, salt, Worchestershire and both cheeses. Cook, stirring until thick. In a baking dish, layer bread, turkey, and tomatoes. Cover with sauce and sprinkle crumbled bacon on top. Bake at 425 until bubbly.

*Ben Nye prefers his hot browns without tomatoes.
Peanut Butter Pie - Allie's favorite recipe from her Mom, Lisa

Crust:
1/4 cups melted butter
1/4 cups brown sugar
1 cup crushed graham crackers
Optional: crushed chocolate

Filling:
2 cups Peanut Butter
1 lb. creamed cheese
2 cups sugar
1 teaspoon vanilla
2 tablespoon melted butter

Topping:
4 oz. semisweet chocolate melted
2-3 tablespoons of hot coffee

Add all filling ingredients into mixer and beat together till smooth. Then add 1 1/2 cups heavy cream and beat for 1 minute. Pour filling into crust and add chocolate topping. Chill for about 6 hours..
