Fond Memories of my childhood and my Mother!

Peanut Butter Brownies

½ cup crunchy Jiff Peanut Butter
1/3 cup butter, softened
¾ cup light brown sugar
¾ cup granulated sugar
2 eggs
2 tsp. vanilla
1 cup flour
1 tsp. baking powder
¼ tsp. salt
2 pkgs. (6 oz) semi-sweet chocolate morsels

In a large bowl, combine peanut butter, brown & granulated sugars; beat until creamy. Beat in eggs, one at a time, then vanilla. In a separate bowl, stir together the flour, baking powder and salt. Gradually stir this into the peanut butter mixture until well mixed. Stir in one package of the chocolate morsels. Spread batter evenly in a greased 13x9x2 inch baking pan. Sprinkle remaining chocolate on the top. Bake at 350 degrees for 30-35 minutes or until firm.

“Special Treat for a Rainy Day”

This recipe is not really a “recipe” but more of a gesture that I remember on rainy days or Sunday afternoons when Mama would let us experiment in the kitchen. It was truly one of my all-time favorite desserts.

Nabisco Saltine Crackers
Large Marshmallows
Jiff Crunchy Peanut Butter

Spread peanut butter evenly on saltines. Top with a marshmallow and put on a sheet pan and run under the broiler. Broil until the marshmallow is toasted to a golden brown. Be careful…marshmallow is hot but you do want to eat these while they are WARM. You will LOVE this recipe!!
