Hot Bacon Sour Cream Dressing for Spinach Salad

6 slices bacon, fried, crumbled and drained
¼ cup minced onion
2 Tbs. sugar
2 tsp. flour
¾ tsp. salt
1 cup sour cream
2 Tbs. milk
2/3 Tbs. vinegar
½ lb. cold, crisp spinach

To excess bacon fat, add onion and cook until tender. Add combined sugar, flour and salt. Stir/heat until blended, add milk and sour cream a little at a time and stir until thickened. Add bacon & vinegar. Pour over spinach.

Serves 8.

Spinach Casserole

1 (10 oz) pkg. frozen chopped spinach
2 hard-cooked eggs
½ cup milk
1 Tbs. flour

¼ tsp. salt
1 Tbs. mustard
1 Tbs. margarine
Bread Crumbs

Cook spinach for 2 minutes. Drain. Turn into 1 quart casserole dish. Top with 2 sliced eggs. In a jar, shake milk, flour, salt & mustard. Put into small saucepan and add 1 tbs. margarine. Cook over medium heat until thick. Pour over spinach and eggs. Top w/ bread crumbs. Bake at 375 for 20 minutes.

Serves 4.
