Get a head start on Holiday Baking with 2 of my favorite cookies that freeze beautifully.

Lace Cookies

½ cup white sugar
½ cup brown sugar
1 cup quick cooking oatmeal
½ teaspoon salt
1 tablespoon flour
1 egg, well beaten
½ teaspoon vanilla

Put foil on cookie sheet. Put 1 teaspoon of cookie mixture on foil. Press down a bit. Bake at 325 degrees until golden brown, about 8-10 minutes. Cool, then peel cookies from foil. Store in a tin to keep crisp.

Lemon Cheese Logs

1 cup sugar
1 cup margarine
3 oz. cream cheese
1 egg yolk
2 ½ cups flour

1 cup pecans, chopped
½ tsp. salt
½ tsp. grated lemon rind
1 6-oz. semi-sweet

Combine sugar, butter and cream cheese and cream until light and fluffy. Add egg yolk, beating well. Stir in flour, nuts, salt and lemon rind. Mix well. Cover and chill. Shape dough into 2’’ logs. Place on ungreased sheets and bake 325 for 12 minutes. Dip end of cookie in melted chocolate.
