Cream Pralines

1 lb. light brown sugar
few grains of salt
3/4 cup evaporated milk
1 Tbs. butter
2 c. pecan halves

Mix sugar, salt, evaporated milk and butter in medium size saucepan. Stir over low heat until sugar is dissolved. Add pecans and cook over medium heat to soft ball stage. Remove from heat and let cool 5 minutes. Beat until mixture begins to thicken and coat nuts lightly. Drop rapidly from a teaspoon to form patties. Makes about 44 small pralines.

Christmas Mints

2 1/2 cups powdered sugar
1 3-oz. pkg. cream cheese, softened
1/2 tsp. peppermint extract
8 drops green food coloring
8 drops red food coloring
Sugar

Cream powdered sugar, cream cheese and peppermint extract, using a small bowl. Divide mixture, coloring half green and half red. Knead well to pie dough consistency. Form into 1/2 inch balls in sugar. Press into candy molds. Remove immediately. Yields 2 dozen.
