We recently had a Pie Contest at work among our staff. We had every imagineable pie and had lots of fun tasting. I submitted 2 and these are the recipes. Try these as part of your Thanksgiving Buffet.

Pineapple Pie

Crust: 1 stick butter
1 cup flour - sifted
1 Tbs. sugar
Mix and press into pie pan. Bake at 325 degrees for 25 minutes

Filling: 1 can crushed pineapple (in own juice)
1 cup sugar
1 Tbs. flour
Cook until thick and let cool

Beat 4 egg whites. Fold in pineapple mixture and put in pie shell. Bake at 325 degrees for 25 minutes.

Refrigerate.


Macaroon Pie

12 saltines, crushed
12 dates, chopped
1 cup pecans
1/4 tsp. almond extract
1/4 tsp. baking powder
3 egg whites
1 cup sugar

Mix all ingredients and fold in beaten egg whites. Bake in a greased pie pie on 350 degrees for 25-30 minutes. Serve with whipping cream on top..
