1 can corn
1 can black beans
1 sm. onion, diced or 6 chopped green onions
2 jalapeno peppers, seeded and chopped fine
1/2 red sweet pepper, chopped
2 tomatoes, diced
1/4 cup olive oil
juice of 1 lime
1/2 tsp. cumin powder
salt & pepper
1/4 cup cilantro, chopped
Drain corn and beans. Place in bowl with other ingredients.
Refrigerate several hours, stirring occasionally before
serving.
Can be used as a side dish or as a salsa with tortilla chips.
