Roast Pork Tenderloin

2 Tbs. butter, melted
1 tsp. dried rosemary, crushed
1 tsp. dried whole thyme
1 large clove garlic, minced
2 (1 - 1/2 pound) pork tenderloins
1/3 cup orange marmalade
2 Tbs. brandy

Combine first 4 ingredients; brush tenderloins with butter mixture. Place tenderloins, fat side up, on rack in a shallow roasting pan. Bake at 375 degrees for 15-20 minutes. Combine marmalade and brandy; brush over roast. Bake an additional 15-20 minutes or until meat thermometer registers 160 degrees.

Apple Dressing

3 cups crumbled cornbread
2 cups peeled and chopped cooking apples
1/2 cup chopped celery
1 small onion, chopped
1/4 cup butter or margarine, melted
1/2 tsp. salt
1/2 tsp. poultry seasoning
1/2 cup milk
1 egg, slightly beaten
1/4 cup butter or margarine, melted
1/2 tsp. salt
1/2 tsp. poultry seasoning
1/2 cup milk
1 egg, slightly beaten

Combine all ingredients. Spoon into a lightly greased 8 inch square pan.
Bake at 375 degrees for 30 minutes.
