I just love pies in the summertime for dessert. Hope you will enjoy 2 of my all-time favorites!

Chocolate Pie

Crust:
2 c. oatmeal, toasted
1/2 pkg. sliced almonds OR 1 cup coconut, toasted
1 stick margarine, melted
1/4 cup. light brown sugar
Mix the above ingredients together and press into pie pan. Bake 10 minutes on 375. Push the sides back up in the pan as soon as you remove it from the oven.

Filling:

1 medium cool whip, thawed
4-6 bars Heresy chocolate bars with almonds (melted)
Fold together and pour into shell.
Refrigerate

Serves 8

 

Macaroon Pie

12 saltines, crushed
12 dates, chopped
1 cup pecans
1/4 tsp. almond extract
1/4 tsp. baking powder
3 egg whites
1 cup sugar
 

Beat egg whites until frothy and then gradually add sugar and baking powder until blended. Fold in the rest of the ingredients and bake in a greased pie pan for 25-30 minutes at 350 degrees.

Servings - 8
