
These are a couple of recipes from the mid-70's, when Reagan was
President and I was a newlywed. Great for cooking on a budget!
Barbecued Chuck Roast
Sprinkle both sides of roast with Accent. Place in a shallow dish. Thoroughly combine all other ingredients. Pour mixture over roast and marinate for 2-3 hours turning once or twice. Place roast on grill or broiler pan and broil about 6 inches from heat. Turn roast and baste with marinade for every 10-15 minutes. Broil a total of 35 to 45 minutes for a medium rare roast or until desire doneness. Chicken Croquettes
Melt butter in saucepan over low heat. Stir
in flour. Add stock slowly. Add salt and pepper and cook over
low heat, stirring, until thick and creamy. Add the chicken &
parsley and blend. Remove from heat. Beat one of the eggs. Add
to chicken mixture. Cook one-minute longer. Cool. Shape into croquettes.
Combine remaining egg with milk. Roll croquettes in this and then
crumbs. Deep fry or pan fry..375 degrees for approximately 2 minutes
a side.
