Leprechaun Chocolate Chip Cookies
1 cup butter, softened
1 cup brown sugar
3/4 cup white sugar
2 eggs
2 Tbs. crème de menthe liqueur

3 cups all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
3 cups mint chocolate chips

Preheat oven to 350 degrees. In large bowl, cream together the
butter, brown sugar and white sugar until smooth. Beat in the
eggs, then stir in the crème de menthe liqueur. Combine
the flour, baking soda and salt; stir into the mint mixture. Mix
in the chocolate chips by hand using a wooden spoon. Drop dough
by heaping teaspoonfuls onto an ungreased cookie sheet. Cookies
should be at least 2 inches apart.
Bake for 8-10 minutes in the preheated oven. Allow cookies to
cool on baking sheet for 5 minutes before removing to a wire rack
to cool completely.
