Squash Fritters
2 medium-sized yellow squash, grated
1/4 cup onion, diced
1 tsp. brown sugar
1 tsp. salt

1 Tbs. all-purpose flour
1 large egg, lightly beaten
2 tsp. butter, melted
1/2 cup olive oil

Stir together first 8 ingredients. Heat olive oil in a large,
heavy skillet. Drop by tablespoons into hot oil. Fry until golden
brown. Drain on paper towel and serve hot.
Molasses Baked Beans

1/2 pound ground beef
2 (16 oz.) cans pork and beans
1 (16 oz.) can barbecued beans
1 medium onion, chopped
1/2 cup brown sugar, firmly packed
1/4 cup molasses
1/4 cup catsup

2 Tablespoons prepared mustard
1 Tablespoon Worcestershire sauce
1 clove garlic, crushed
1 teaspoon seasoned salt
1/2 teaspoon lemon pepper seasoning
4-5 slices bacon
|
Cook ground beef until browned; drain well. Combine all ingredients except bacon
and mix well. Pour into a 13-inch by 9-inch baking dish and top with bacon. Bake
at 350 degrees for 2 hours.
