Football Tailgating Recipes
Sweet & Sour Crunch
2 (3 oz) packages Ramen noodles
1/2 cup sesame seeds
1 (3 oz) package sliced almonds
1 head cabbage, finely chopped
4 green onions, chopped

1/4 cup cooking oil
1/4 cup red wine vinegar
1/2 cup sugar
2 Tbs. soy sauce

Discard Ramen noodle seasoning packet and break noodles. Arrange noodles,
sesame seeds and almonds on a baking sheet. Heat at 325 degrees until
lightly golden. Allow to cool and transfer to serving bowl. Add cabbage
and onions to noodles. Toss well and set aside. Combine oil, vinegar,
sugar and soy sauce in small bowl, thoroughly blending. Pour over cabbage
mixture before serving.
Summer White Corn and Pea Salad
2 cups fresh Silver Queen corn
2 cups fresh or frozen peas
2/3 cup chopped celery

1/2 cup chopped sweet onion
1/2 cup chopped red bell pepper
|
Heat corn and peas in saucepan over medium high heat until tender.
Drain and cool. Transfer corn and peas to large salad bowl and add
celery, onion and bell pepper. Toss with Parsley Dressing coating
well. Cover and chill.
Parsley Dressing
1/2 cup seasoned rice vinegar
2 Tbs. fresh parsley, minced
1 Tbs. brown sugar

1/2 tsp. salt
1/4 tsp. pepper
1 Tbs. fresh mint, minced
|
Combine ingredients in small bowl, mixing well.
