Hallelujah Apple Pie
We recently had an apple pie contest at VeryVera and I entered a true made
from scratch Apple Pie. I literally made the recipe up as I went along. So, for
the first time ever in print here is my original pie recipe for you to enjoy during
Harvest Month.
Crust
1 1/2 cup oatmeal
1 cup coconut
1/2 cup toasted almonds, crushed |
3/4 stick of margarine, melted
1/4 cup brown sugar |
Mix the above in a bowl and then press into pie plate covering the bottom and
sides. Bake at 375 degrees for 10 minutes.
Filling
5 Granny Smith apples, peeled and thinly sliced
1 Tbs. lemon juice
1/4 cup Amaretto
1 1/2 Tbs. cornstarch |
1/2 tsp. Apple Pie Spice
1/2 cup brown sugar
1/2 cup butterscotch morsels
1 cup grated sharp cheddar cheese |
Combine first 6 ingredients in a bowl and mix well. Then, layer the apples
in a circle formation in the baked pie shell and fill to the top. As you go,
sprinkle with butterscotch morsels. Bake at 450 degrees for 30 minutes
then sprinkle the top with the cheese.
Topping
1 Granny Smith apple, peeled and thinly sliced
1 cup thin pancake batter
1/2 cup flour |
Peanut Oil
Cinnamon Sugar |
Toss apples in a bowl with the flour to dust. Transfer to the batter and coat well.
Fry in hot oil in a deep pot until golden brown. Drain on paper towels and then
dust with cinnamon sugar. Put the finished pie under the broiler just before serving
for about 3 minutes are just until the cheese as barely melted then garnish the top
of the pie with the fritters in circular pattern until all the apples are used.
