Bitsy’s Meatloaf

Ingredients

Meatloaf

  • 1 1/2 lb ground beef (80/20 ground chuck recommended)
  • 1/4 lb hot pork sausage
  • 1 c panko bread crumbs
  • 1 large egg
  • 1 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 medium Vidalia onion, chopped
  • 1/2 c marinara sauce
  • 1 tbsp. Worcestershire sauce

Sauce

  • 1/2 c marinara sauce
  • 2 tbsp. yellow mustard
  • 2 tbsp. dark brown sugar
  • 2 tbsp. white vinegar

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, mix all the meatloaf ingredients together until well incorporated.
  3. In a separate bowl, mix together the sauce ingredients and set aside.
  4. Press the meatloaf mixture into an 8 x 4-inch loaf pan.
  5. Place in the oven and bake for 45 minutes.
  6. Drain the fat and cover with the sauce.
  7. Place back in the oven and bake for an additional 5 to 10 minutes.
  8. Remove from the oven and let it rest for 10 minutes before slicing.
